Easy meatballs

Meatballs in tomato sauce

Easy and comforting soft meatballs, great on their own with crusty bread or to dress your homemade spaghetti.

Ingredients:

  • 400 g of minced meat beef

  • 150 gr of minced chicken

  • 60 g of grated Grana Padano

  • 1 egg

  • Chopped parsley

  • 1 garlic clove, chopped

  • 200 gr of bread soaked in milk (drained and squeezed, not soggy)

  • 50 ml of dry white wine

  • 400 ml of peeled tomatoes in juice

  • 1 sprig of basil

  • Oregano (optional)

  • Plain flour to dust (optional)

  • Salt, nutmeg and pepper (to taste)

Preparation

Mix the minced meat with the egg and all the other ingredients and season with a good pinch of salt, pepper and nutmeg. Knead well until smooth. It should be soft but firm

Now start with the making of the meatballs by rolling little quantities of meat mix in the palm of your hands. You choose the size you like the most. During the process a little drop of oil on your palms could help.

Heat a drizzle of oil in a frying pan, dust the meatballs with flour (optionally) and add them to the pan, increase the heat and toss the meatballs gently around the pan. When they start to pour the wine in, let the alcohol evaporate for 1 minute and add the tomato sauce and basil leaf, mix well and simmer covered with a lid for about 20/30 minutes maximum.
