Tiramisù (with cooked eggs)
I worked in many kitchens and I’ve eaten in many restaurants, the answer is always the same, to me, you can’t beat a properly made tiramisù 😋😁 . What do you think? Who is a tiramisù lover and who hates it here 🧐 . Below is my recipe with fully cooked eggs if you are interested 😎👇👇
Ingredients 6 pax
6 yolks
50 ml passito wine
120 g sugar
500 g mascarpone cheese
150 ml whipped cream
200 ml coffee
12 pcs lady fingers
Method
1. In a large heat resistant bowl beat the yolks with sugar and wine than place the bowl over a pot of gently simmering water. Cook while mixing on a bain-marie for about 5/7 minutes. The eggs are cooked at 80 degrees Celsius but that could also be simply checked by the look of the sabayon. It needs to be creamy and thick, exactly like a custard.
2. Let it cool and fold in gently the mascarpone and whipped cream. Let it set in the fridge for 30 mins.
3. Dip the lady fingers in the coffee (you can add a splash of amaretto liqueur to the coffee too) and build the tiramisu as you wish in glasses or in a large tray to be scooped after. It is good practice to let the glasses set in the fridge for a few hours if you can before serving.
4. Dust with cocoa or grated dark chocolate just before serving.
