Squid ink Spaghetti
Might not be to everyones' taste, but to all seafood lovers, this is a must try!
Serve: 4 // Prep time: 30 minutes
Ingredients
450 gr spaghetti
2 garlic cloves
3 Tbsp olive oil
2 tsp squid ink, pasteurized
300 gr squid, clean, aka calamari, chopped into strips
1 chili, optional
1 lemon for the zest
basil leaves to garnish
Salt and pepper to taste
50ml white wine
Method
Step 1
In a large pan fry the chopped garlic and chili in olive oil. When golden, add the chopped squid, a little pinch of salt and let it cook on medium heat for a couple of minutes. Now pour in the white wine, let the alcohol evapourate than add the squid ink and tun off the stove.
Step 2
Now cook the spaghetti in salted boiling water and when ready toss them straight away into the dressing. Add a drizzle of olive oil and a ladle of pasta water to loosen up the sauce and stir and toss the pasta on medium heat for about 1 minute to create a creamy emulsion.
Step 3
Season the pasta to taste and plate in large bowls. Top with lemon zest and garnish with fresh basil leaves.
