From Italy...

I am originally from Abruzzo, a small region in Central Italy that is rich in culinary tradition. Beautiful landscapes of the Gran Sasso Mountains and the mild Adriatic coastline inspired my first kitchen experiences with seasonal ingredients that were always fresh, and abundant. Early memories of cooking hark back to running around the kitchen with my brothers and hiding under the table as our grandmother made fresh pasta, complaining about all the noise we were making. Soon, mealtimes became synonymous with family, sharing, and bringing people together, something that still is my driving force today. Before arriving in London in 2010, I travelled throughout Italy gaining experience with industry icons such as Giovanni Rana, the Italian king of pasta and at two Michelin-starred restaurants San Domenico in Imola and Perbellini in Isola Rizza.

Since being in London, I’ve had several challenging roles, for Restaurant Dolada in Mayfair, at three Michelin-starred Alain Ducasse at The Dorchester and Knightsbridge’s Michelin starred Zafferano before being offered the position of Head Chef at the Italian Embassy in London. A step away from the pressure of Michelin stars, cooking at the Embassy allows me to go back to my roots where food was about trying to recreate a sense of comfort and home: the very essence of my early aspirations. Cooking for events at the embassy that ranged from intimate dinners to large galas, have boosted my ability to balance professionalism and etiquette with warmth and the personal touch.

...and beyond

This experience encouraged me to take part in BBC2’s MasterChef: The Professionals 2015 fighting my way to the top and ranking as one of the finalists. In 2015 I set up Danilo Cortellini Ltd, a food, drink and restaurant consultancy company that allows me to take part in exciting projects and international exhibitions. In 2016 I published my first cookbook, ‘4 Grosvenor Square’, The menu of the Italian Embassy in London’, both in English and Italian. More recently, I’ve appeared on BBC1’s Saturday Kitchen and I have successfully opened TIRAMISOO Events, my catering and Events Company based in London.

My first cookbook is a celebration of my time at the Italian Embassy in London, featuring recipes that reflect our day-to-day life; from business lunches to gala dinners, family meals and drinks receptions. Featuring authentic Italian dishes using beautiful Italian products. Dishes include pastas, risottos, main courses, desserts, breads and cakes, all of which can be recreated easily at home.

The book is divided into sections based on the occasion. This provides an insight on how I plan my menus at the Italian Embassy, however, like a meal in any Italian’s home my recipes are designed not to be rushed, they are to be enjoyed both in cooking and eating. I also want to inspire you to create your own version of them.
